Challenging the Classics, Recreating a Classic through International Collaboration
This pop-up store was created for the first cross-national collaboration between French pastry chef Thomas Chien and Japanese dessert master Susumu Koyama. To reflect this unique partnership, the design team, known for its thematic, cyclical, and brand-focused approach, drew inspiration from the elements of mountains, earth, nature, and French line art. The concept also incorporates the imagery of Taiwan's iconic mountain ranges, symbolizing the co-created financier cake with a ‘lava convection’ technique that mirrors the natural rise of mountains, offering a delicate, multi-layered, and distinct flavor profile.
Using recycled materials such as reservoir mud-based paints and accordion paper, the design features modular elements that are easy to disassemble and reassemble for repeated use. By focusing on local ingredients and exclusive techniques, this new interpretation of a classic French dessert series encapsulates the value, charm, and spirit of the collaboration, communicating beautiful moments and flavors through the design of form, meaning, and texture.
